
Sweet Potato Pancakes with Maple Syrup

Ingredients
- 1 cup Bruce’s Mashed Sweet Potatoes (15 oz)
- 1 cup flour
- 1 tbsp sugar
- 1 tsp baking powder
- ½ tsp cinnamon
- 1 cup milk
- 1 egg
- 2 tbsp melted butter
Instructions
- In a medium bowl, whisk together flour, sugar, baking powder, and cinnamon.
- In a separate bowl, mix milk, egg, melted butter, and Bruce’s Mashed Sweet Potatoes until smooth.
- Combine wet and dry ingredients, stirring just until blended.
- Pour ¼ cup batter per pancake onto a greased skillet or griddle over medium heat.
- Cook 2–3 minutes per side, until golden brown.
- Serve warm with butter, maple syrup, or a sprinkle of powdered sugar.
