Sweet Potato Pancakes with Maple Syrup

Ingredients

  • 1 cup Bruce’s Mashed Sweet Potatoes (15 oz)
  • 1 cup flour
  • 1 tbsp sugar
  • 1 tsp baking powder
  • ½ tsp cinnamon
  • 1 cup milk
  • 1 egg
  • 2 tbsp melted butter

Instructions

  • In a medium bowl, whisk together flour, sugar, baking powder, and cinnamon.
  • In a separate bowl, mix milk, egg, melted butter, and Bruce’s Mashed Sweet Potatoes until smooth.
  • Combine wet and dry ingredients, stirring just until blended.
  • Pour ¼ cup batter per pancake onto a greased skillet or griddle over medium heat.
  • Cook 2–3 minutes per side, until golden brown.
  • Serve warm with butter, maple syrup, or a sprinkle of powdered sugar.
