Jazz It Up: Toasted Marshmallow Sweet Potato Casserole

Need a quick dish that’s sure to please? Start with a can of Bruce’s Yams!

Servings: 6

Ingredients:

  • 1 (40-oz.) can Bruce’s Yams Cut Sweet Potatoes in Syrup, drained
  • 1/2 cup unsalted butter, melted
  • 1/2 cup light brown sugar, packed
  • 1 tsp. ground cinnamon
  • 1/2 tsp. salt
  • 1 cup mini marshmallows

Directions:

1. Heat oven to 350°F. Lightly grease a standard 9×13-inch baking dish with cooking spray and set aside.

2. Mash Bruce’s Yams Cut Sweet Potatoes in a large bowl until completely smooth. Add butter, brown sugar, cinnamon and salt and mash to combine.

3. Transfer mixture to prepared baking dish. Bake until sweet potatoes are warmed through, about 30 minutes. Top with marshmallows in an even layer and bake for an additional 5-8 minutes, or until marshmallows are lightly toasted and golden-brown. Serve warm.
